Dundee Bar & Restaurant On Course for December Opening

With just under a month until its opening in Dundee, local businesses behind one of the largest craft beer bars in Scotland have given a sneak preview of the new premises.
Andrew Black of Andrew Black Design visited the premises yesterday with Tim Butler, Director of St Andrews Brewing Company and Darren Wilson, Managing Director of SteamPunk Fit Out of Blairgowrie.
Located just a stone’s throw from Slessor Gardens, forming part of the Caird Hall envelope, the 200-seat, 750 square metre bar and restaurant is due to open early next month, generating around 50 jobs. A celebration of locally sourced and produced food and drink, Caird Hall will be a platform for St Andrews Brewing Company’s own, award-winning beers as well as an array of wines, beers and gins from numerous local suppliers including Arbikie Highland Estate Distillery, Ogilvy Spirits, Verdant Spirits, 71 Brewing and Law Brewing.
Serving everything from delicious burgers to amazing steaks and seafood, the restaurant will focus on modern Scottish cuisine in a social setting, tapping into local delicacies such as Tayside soft fruits, Arbroath smokies, Dundee cake and, of course, locally sourced meat and dairy products.
Challenged with breathing new life into the historic building, while ensuring it will be functional, Andrew Black of Andrew Black Design commented, “Our design is very much inspired by the products that Tim and his team produce. We were tasked with creating a design that allowed enjoyment of their own award-winning beers as well as whisky, gin, wine and fine food. This led to creating areas within the interior that lend themselves to each experience. Each area literally celebrates the produce and is designed to make the experience both comfortable and exciting.”
Tim, who owned and managed the award-winning St Andrews Seafood Restaurant for 13 years added, “From the outset, we were determined to work with local, reputable companies, from the design and interiors right through to the talented creators of the food and drink on offer.
“Andrew Black Design came highly recommended to me and I was also personally aware of some of their recent projects so it was always clear that they would do an excellent job, in tandem with SteamPunk Fit Out.
“I was keen to connect Dundee’s fascinating heritage with current life and, with so much culinary history in and around the city, there is an endless range of fantastic produce to tap into. Indeed, having recently discovered and reworked the recipe of a 19th century salmon dish for our Edinburgh premises, we plan to create similar dishes relevant to Dundee’s renowned past and look forward to surprising our clients with some interesting new flavours.”
The interior has been brought to life by joinery and fit out company SteamPunk Fit Out of Blairgowrie, principal contractors on the project, managing the site and all contractors on a daily basis. The young and vibrant company is also manufacturing most of the specialist finishes from its Blairgowrie base, from the walk-in display wine cellar and private dining areas through to the polished concrete for the bar tops.
